BERRY CRISP
Type of Recipe: Cooked Desserts
Difficulty: Easy

List of Ingredients:
1 quart strawberries, sliced if large
1/3 cup sugar
1/3 cup margarine (or butter)
1/2 cup rolled oats
1/2 cup flour
3/4 cup brown sugar

Directions: Combine strawberries and sugar and place in 8" square baking dish.
Mix margarine, oats, flour, and brown sugar until crumbly.
Sprinkle on top of berries. Bake at 375 degrees until brown on top, about 35 minutes.

List of Ingredients:
1/2 stick margarine or butter
1 cup sugar
1 cup self-rising flour
1/2 cup evaporated milk
1 quart (approx) strawberries, sweetened to taste

Directions: Melt margarine or butter in 9x13 pan and pour in strawberries.
In separate bowl, mix sugar, flour, and evaporated milk.
Spread over berries. Bake at 350 degrees until brown, about 45 minutes.

LAYERED STRAWBERRY CAKE

List of Ingredients:
2 quarts fresh strawberries, sliced
1 19.5 oz pkg. butter recipe golden cake mix
2/3 c. buttermilk
1/2 cup butter or margarine, softened
3 large eggs
1/2 cup strawberry preserves, divided
2 cups whipping cream
3 Tbsp. powdered sugar
Garnish: Fresh strawberries

Directions: Beat cake mix, buttermilk, butter, and eggs with an elecric mixer until cake mix is moistened. Beat at medium speed 4 minutes. Pour batter into 2 greased and floured 9-inch round cake pans. Bake at 350 degrees for 18-20 minutes or until a wooden toothpick inserted in center comes out clean. Cool on wire racks 10 minutes; remove from pans. Brush top of each layer with 2 Tbsp. preserves. Beat remaining preserves with whipping cream and powdered sugar at high speed with electric mixer until stiff peaks form. Place one cake layer on a serving plate. Arrange half of strawberries over layer. Top with half of whipped cream mixture. Repeat procedure with remainig layer, strawberries, and whipped cream mixture. Garnish if desired.

STRAWBERRIES 'N' CREAM CAKE

List of Ingredients:
3 cups sugar
3 cups all-purpose flour
1/4 tsp. baking soda
1/4 tsp. salt
1 cup butter
1 8-oz container sour cream
6 large eggs
2 tsp. vanilla (butter, sour cream, and eggs should be room temperature)

Filling:
12 oz. CoolWhip
16 oz. sour cream
2 cups 10x powdered sugar
3 cups sliced strawberries, sweetened to taste

Directions: Place all ingredients except filling in bowl of large, heavy duty mixer. Beat at low speed until blended. Beat at medium speed until well creamed. Pour batter in large tube pan sprayed with Bakers' Joy. Bake at 325 degrees for 1 to 1-1/2 hours. Cut cake crosswise into four layers. For filling, mix CoolWhip, powdered sugar, and sour cream with hand mixer. make layers in this order: cake, strawberries,filling. Frost cake with additional CoolWhip.

STRAWBERRY-BANANA COOLER

List of Ingredients:
4 crushed ice cubes
3/4 cup pureed strawberries
1/2 banana
1 tsp. honey

Directions: Crush ice cubes in blender. Add banana, strawberries, and honey. Blend until well mixed. Pour into glasses and serve. Serves 2.

List of Ingredients:
2 cups self-rising flour
1/2 cup sugar
1 cup strawberries, sliced
1 egg, beaten
1 cup milk
1/4 cup melted margarine or butter

Directions: Mix flour, sugar, and strawberries to coat fruit. Combine margarine, egg, and milk in a separate bowl.
Add this to the dry mixture. Stir until mixed thoroughly. Spoon into muffin pans. Bake about 12 to 15 minutes at 450 degrees.
Makes 12 muffins.

1 cup strawberry yogurt
1/2 cup cranberry juice cocktail
1 1/2 cup strawberries, fresh or frozen

Directions: Place all ingredients in a blender. Cover and blend until smooth.

STRAWBERRY SOUR CREAM BREAD

List of Ingredients:
2 1/3 cups Bisquick or other Baking mix
3/4 cup sugar
1/3 cup sour cream
1/4 cup vegetable oil
1 tsp. cinnamon
3 eggs
2 tsp. vanilla extract
1 cup washed, hulled, and chopped fresh strawberries
or chopped frozen unsweetened strawberries, partially thawed
1/2 cup nuts,chopped

Directions: Preheat oven to 350 degrees F. Spray a 9x5x3-inch loaf pan with nonstick cooking spray and dust lightly with flour. Combine baking mix, sugar, sour cream, oil, cinnamon, eggs, and vanilla. Beat 50 strokes by hand. Fold in strawberries and nuts. Pour into prepared pan and bake 45-60 minutes until toothpick inserted in center comes out clean. Cool loaf 5-10 mnutes on wire rack before removing from pan. When cool, wrap in plastic wrap or aluminum foil and store in refrigerator.
